Styles

We don't sort our coffee by roast level. Every bag is roasted with the goal of getting the most we can from the raw beans, and the roast changes based on the bean. If you aren't sure how to choose something that suits you, the best place to start is with one of these profiles, to narrow down the style of coffee you enjoy.

  1. Traditional

    Coffee that tastes like coffee.

This is what a typical coffee drinker expects when they pour a mug in the morning. We roast these for a heavier body, a comforting foundation, and more sweetness than acidity. They hold up to milk, pull as classic gooey espresso, and don't make you think too much.

    Typical flavors
    chocolate
    caramel
    nuts
  2. Modern

    Bright and clean.

This is the sweet spot of modern specialty coffee. We typically roast these lighter to pull out the terroir of the beans. Flavor profiles will vary more than in a traditional cup. Expect a lot more fruit and sweetness up front, but well-balanced and easy to drink. These coffees tend to work great for anything from pourover to AeroPress to espresso, but the espresso shots will be better as a soup or turbo shot than a classic pull.

    Typical flavors
    citrus
    berry
    honey
  3. Experimental

Funky fermentation, berry bombs, and ultralight floral roasts.

This is where we put the rotating lots that push the limits of what coffee can taste like. Sometimes that comes from a weird new fermentation process the farmer is trying. Sometimes it's a more standard bean that pops in an unusual way when we roast it just right. These coffees range from delicate to loud, but you can count on them being unconventional palate expanders.

    Typical flavors
    sangria
    jasmine
    blueberry pie
